Today the weather has been unusually cool and breezy here - in the lower 60's. Now I'm not complaining it feels great after all the upper nineties and one hundreds we have been having. However, the big temperature difference does make it feel like late autumn - chilly. Since its been warm its been a while since I've heard, " Mom, can we make some cocoa?" Now this isn't the store bought stuff - it is a mix that I have been making since my 30 year old was 5, except now we use non dairy milk. It's easy to make, wonderful to have on hand. So the boys whipped up a double batch put it in our large cocoa container and so begins the chilly nights of cocoa drinking.
Hot Cocoa Mix
3/4 cup unsweetened fair trade cocoa powder
1 1/2 cups organic sugar cane
Combine the ingredients in a mixing bowl and blend well. Store in an air tight container in a cool, dry place.
To Make: Place 1 1/2 teaspoon of mix in 1 to 1 cup mug of hot soy, rice, or coconut milk, stirring until dissolved. The amount can be adjusted for taste.
